Hospitals run by bean counters who find every place they can cut corners.
Hospitals have a captive audience who has no other options than to eat the food, so they can’t really shop around based on cost or quality.
Hospital food is often purposefully low in sodium, acid, and heat to not exacerbate digestive problems of patients. The result is very bland food, as acid, salt, heat, fat, and sugar are 5 of the most important flavors.

I've spent a lot of time with family members at the Heart Hospital in Lafayette and Woman's Hospital in Baton Rouge and it absolutely amazed me seeing the amount of non-healthy foods that were served and no healthy options aside from a poached egg and fruit.
Never will forget when my mother had a heart stent put in and they brought her a barbecue sandwich on white bread as soon as she got back to her room.

Food is there to survive not taste good. It's purposefully bland and low in sodium.

I can’t imagine anything in Baton Rouge having anything good
I spent months at MD Anderson with my mom two years ago. That place is its own city and they have a food court and Chick-fil-A and the in room menu was 3 pages long.
They also have their own menu for DoorDash and waive the fees for most places
Most of newer Baylor Scott and White and Texas Health hospitals have great food options.

Most hospitals contract out the food service for a set fee to (obviously) make for profit, esp the not-for-profits. Lowest bidder gets contract. Lowest bidder saves money by making your meatloaf as light as a feather by adding bread crumbs to it. 50% hamburger, 50% bread, and one hundred percent charge.

It’s what they give the patients that is bad. North Oaks in Hammond and St Tammany in Covington are not bad as far as the cafeteria.

At least one hospital near me has a different food truck every day that parks right in front by the cafeteria/main entrance.
They have a food truck schedule posted for the week so you know who all is coming.

Depends on how hungry you are.
I was hospitalized with pancreatitis at UAB. The only way to alleviate the inflammation is to go without food because food triggers your pancreas to start working. You don’t want that. Anyway, I could only chew ice for two days, then I got ice and jello and juice on day three. Day four, they brought me one of the best meals I’ve ever had in my life. Hamburger steak with gravy, mashed potatoes and gravy, green beans and a roll. Let me tell you it might as well have been a medium rare ribeye at Kaiser’s Chophouse. This was four years ago and I still remember it.

The hospital I worked at for a bit, was born at and still use actually has great food. It might be an anomaly. Breakfast is the best meal of the day there. If you want eggs, hash browns, bacon, custom omelettes, etc… they make it right in front of you.

I use very little salt at home, no salted butter or anything. I use a lot of herbs and other things to provide flavor, though.
Spent a week in the hospital. Nutritionist came in to ask for feedback. I wasn't on any special diet, so she said if I wanted better food I should ask my family/friends to bring some in. I lived on that.
Cooking without salt doesn't have to mean cooking without flavor, but they manage it.
