Thanks for mentioning catfish, it reminds me of how hard it has become to find good fried catfish at restaurants in NW La., 25 years ago there seemed to be more catfish places than Mexican food but now most every place that still offers fried fish is using swai. I always ask and if it’s not American catfish I don’t order it, usually just fry my own.

25 years ago in my area around my farm
Now
Humphreys county 25 years ago had almost 100,000 acres of ponds. Now it’s under 5,000. Belzoni had more total millionaires than any city in MS including Madison. Today it’s one of the poorest counties in the country. It’s sad to see

My friends love Mexican-type spots, and while I do think they like the food, I think a big part of it is that it's a lively atmosphere where buying alcohol is strongly encouraged as part of the experience.

I enjoy driving and think I'll continue to do it. Perfect robot lawnmowers first. I don't really like cutting the grass in a 107 heat index.

Definitely not there for the margaritas.
I figure it’s because their lifestyle leaves them so sheltered to the world that they see eating at one of the local Mexican Restaurants is stepping out and being exotic and worldly. I was sitting at the bar of one awhile back having a drink while I waited on a to-go order and overheard a group of Pentecostal ladies in the booth nearest me getting ready to leave. One of them said “You know what? I’m gonna get a Diet Dr. Pepper in a go cup. I know I’ve already had coffee today. I’m so bad!”
The funny thing is the running joke back home about Pentecostal girls was that when the lights go down, the skirts come up.

How close are you to a river?
Swap to river commercial catfishing and convert the ponds to cow and/or row crop.
Or if you don't need to actually work put it in CRP/WRP and start a share club if you have enough acreage.

TexMex is the only restaurant model that is working right now. Every other restaurant has seen their inputs skyrocket. Still cheap to put cheap meat in cheap tortillas.
