They have new owners as of a little under a year or so. The new owners seem a little more ambitious. I would expect them to step up their game.

Wait. Did I read that right? You can't find one enjoyable IPA, but love everything Covington Brewhouse does?
Sorry man, but Covington makes the absolute worst beers in the state. There's not a single one of them I will drink. I've tried and tried, but they're just garbage.

Back to OP, Americans like to make things their own. We do that with beer by adding a metric shite ton of hops per barrel. Our craft pilsners are overhopped. Our black ales are overhopped. Our amber/red ales/lagers are overhopped. Hell, some of our pale ales are overhopped and make British IPAs taste like water. It's how we measure our beer dick size. Be thankful the good hops are hard to come by, or every single American craft brewery would have a 1000 IBU IIIIPA.

Over the last 20 years, espeically the last decade, more and more people have become interested in craft beer and have found that it's ok to not lap up the shite that BMC puts out. Because of this, alot more craft beer is being made than ever before. There are over 2500 breweries/brewpubs now across the U.S. compared to only approx 500 in he mid 90's. IPA's are among the most complex craft beers on the market and can be interpreted in many ways. They also just simply taste the best if you want a flavored bitter beer that you can actually tast the hops in. I crave IPA's. I have craved IPA's for a long time, it's not a fad. It's an acquired taste that most people slowly drift towards as they get into craft beer.

IPAs aren't my #1 beer style, and I thought I'd be okay without them, but then I was in Austria for a few weeks and only drank various lagers. The first thing I got when I landed in the US was an IPA. Something about it that just calls for you every so often.

If I go 3-4 days without drinking a beer, my cravings for an extra hoppy IPA are very strong. I dont solely drink IPA's, as I like just about everything, but I havent gone more than a week 6-7 years without having one.

Hey, no need to be sorry and it doesn't hurt my feelings that you don't like Covington Brewhouse.
Different strokes for different folks. However I can see why you would dislike any beers from Covington Brewhouse. You obviously like IPAs and thus hoppy beers. Of the beers that I've tasted from there none of them are hoppy. That's the type of beers I gravitate to. I just can't get my slow burn going on an IPA.

Same experience in Canada just a few years ago. Damn near got kicked out of a bar in SFO trying to get a Lagunitas IPA as they were closing up.
Canadians have a beer they call IPA that's definitely not an IPA.
