Yes IPA is a fad with certain people and it can be annoying.
No IPA is not a fad long term. Just like every other beer style it's loved/liked/appreciated/despised by different parts of the population.

He's saying that IPAs may be a fad for some people personally; like, they're in an IPA-loving phase. But IPAs in general won't be going anywhere.
The sours comment is really confusing. If the sours you've tried taste like piss, well, you're drinking the wrong sours.

Some people genuinely enjoy IPAs and other craft beers, and some people drink them because they think it makes them special/cool/sophisticated.

How is any particular style a fad? Some styles increase in popularity at times but that doesn't mean it's a fad, it's not like people will stop liking IPAs in the future. Take the Gose for example. A few years ago they were almost forgotten, and now we have several great commercial examples of them.
And nobody drinks an IPA to appear cool, that's fricking stupid.

I am not big on Ipas but find the more I drink them the more I like. My wife thinks they taste like pine sol and I honestly thought the same when I first started trying them.

It's interesting that sours are made with bacteria in combination with yeast or straight up bacteria. The bacteria produce a lot of lactic acid, thus the sour flavor.
The same bacteria that is used to make kefir is use to make sours. Especially lactobacillus (and others). Kefir is pretty sour but I like it because of the creamy yogurt texture and it's great for my digestive tract.

The sours comment was a bit of sarcasm since many are making blanket statements about particular styles of beer. I like sours very much actually. I'm more towards the traditional Flanders Red, Oud Bruin and Gueeze as what I like in sours. The sours I don't care for are some of the heavily unbalanced and over sour saisons that seem to be so popular today.
