Didn’t know anything about this.
I was coming at this from a more traditional ranching standpoint, not wild mustangs. Hence the margins question in the OP.
Still think horse meat is good…

Back in the early 70’s, some stores were importing Beef. It was found to contain a percentage of Horse meat. They were frozen in 60# blocks. They would use the saw to cut it up, put in into the meat grinder, add water to help bring the color back.

BLM is using helicopters to round up mustangs out west, thousands end up at slaughter houses in Mexico and Canada. Cruel and inhumane.

So it's ok to lead a horse into battle to be shot or stabbed to death but killing one for meat is unacceptable?

Yes, it is. I had it in Bled, Slovenia and it tasted like high end beefsteak with a mix of venison. Maybe, just maybe it was how animal raised and cooking process?

I am good with traditional southern US fare. Never had horse as an option and thankful for it.

Tried it once in Europe, didn't really love it.
