Also, the low carb, no dairy, no alcohol thing is by necessity an American thing. Move to a major European city where you’re average 10,000 to 15,000 steps per day before any intentional exercise and you can basically eat what you want, subject to not going crazy. As the French say:

Walk as much as possible, “pay attention” during the week, and then enjoy yourself on the weekends and you’ll be fine. But that’s Europe. Americans don’t have the net calories to spare in most cases.

I get the "no alcohol" prudish old school American way that has seeped into our diet way of thinking. Truth be told, a moderate amount of drinking (6-10(?) a week, wine/spirits) is perfectly fine.

As for the low carb being only American - the traditional Italian diet consisted of less pasta and more animal. One needs to get away from the big cities that have been "Americanize" to get to more traditionally prepared dishes. I am unsure of French foods.

Most dietitians are fat for a reason. It kills me that we keep going higher and higher on insulin doses without restricting carb intake. I’ve given the LCHF lecture to many patients.

Keto or Paleo (LCHF) diets are really great but can be difficult to sustain long term. When I did the paleo diet I usually kept it 80/20 paleo with some occasional heavy carbs. It’s still difficult to do because forgoing grains and dairy sucks. No pizza ever again? I don’t think so.

10,000 steps is approximately 400-500 calories

Or about the same as a slice of pizza. Controlling weight through exercising makes as much sense and cutting your lawn with a pair of scissors.

Yeah, most people suggest that you adhere to the 80/20 rule and you're fine. I still have a pizza night once/month with the kids. I also did not cut out alcohol...that was a bridge too far.

People in Europe are getting fat now, too. Also LCHF isn't just about weight maintenance...the benefits go beyond.

question: the "cold potato" stuff. is that turning it into a resistant starch?

i kind of plan on trying to go in/out of hardcore keto but when i was "out" i wanted to be "good" and try to make rice and all that resistant

Listen to the Rogan/Chris Kresser podcast...it's along those lines, there is a conversion that ultimately doesn't trigger the typical sugar response.

Also, diet isn't cookie cutter from person to person. From what I've read its good to do short term keto and then go more into paleo. Long term keto for some folks can make them feel rundown. At this point I'm really just paleo. I eat meat and veggies with a piece of fruit here and there. I'm not even really worried about a hot potato here and there (though I mostly avoid them) - it's a whole food.

I eat bacon, cheese, pork rinds, meat of all kinds, salad, dressing, meat, salad dressing, mayo, meat, dressing, cheese, and other low carb shite to a glutton status, and I have for years. I have never felt better. I have steady energy, and a few sunflower seeds when I get hungry magically knock out any hungry feeling for hours when I don't have time to eat.. It is no longer a diet. Its simply how I eat. I have cheat days and eat entire bags of chips, half cartons of ice cream, bread, and whatever the frick I want every now and then... With no consequence.

I am healthier than I have ever been, and its because I essentially reversed the fricking government food pyramid.
