What's going on over there?

At least half their products used to be "fully cooked"
Now virtually everything is "ready to cook"

I got some Manda sausage recently and it is very different. It looks like Hillshire Farms sausage now.

Don't know, but I have never cared for their products. For a home grown Louisiana company, their products suck.

okay, I have an unpopular opinion, but Manda is not bad, and pretty decent for being the cheapest in the case, is it homemade old school smoked sausage, no, but for ~$4/lb grilled and sliced or on a hot dog bun it is pretty good

With that being said I did have some this weekend and noticed the 3 pound boxes now have 3 one pound links that are individually vacuum sealed which is a plus, the negative I noticed is the links are much bigger around which makes it difficult for a poboy without slicing long ways, but I still like the product

USDA labeling regulations. A processor is better off labeling it as ready to cook, cook and serve, etc. Every processor should be labeling it this way now.

According to the USDA, "Ready to Eat" (aka fully cooked) tells the customer you can open the pack and eat it without heating. It's better for the processor to not label it this way, telling the customer to heat the sausage before eating. It's all semantics and regulation wording.

way back in 2006 we built a new fab shop on neosho across the street from Manda. Once a week or so the smells coming out of that place would run a buzzard off a gutpile. We’d have to shut down for the day it was so bad

never ate manda again

Tell you what...when I open a package of andouille sausage from Rod's in Church Point, or Kartchner's or Nunu's, first thing I do is slice off an end piece and eat it. Snack a bit while cutting it up whatever dish I'm putting it in.

Should I stop doing that?

Oh...and why anyone living in South Louisiana would want Manda sausage is beyond me. Way too many better options available.

No. As I said, it’s semantics on labeling and regulations. The smoked sausage is fully cooked, it’s just labeled differently to fit into certain regulations.

Manda ain't bad, it's way better than many other mass market sausages and doesn't shrink much. Butterflied, grilled and slathered with bbq sauce about 10 minutes before pulling it off is legit.

Agree. There are much better options. That said, the "smoke flavor added" options are not one of 'em and for that reason alone, Manda is a better option than those.
