Between 3 newly created positions and normal turnover; we've been interviewing and hiring pretty regularly. What they put on their application form is what is used 90% of the time. A science based college degree is a minimum requirement so that filters out a lot.
Our issue is that we've been having a lot of people with their PhDs applying for these entry level jobs. And that's just not what we're looking for in an entry level environmental scientist job. Mostly because there is a very small chance that (a) this is a job they want and (b) they will stick around long enough for it to be worth hiring and training them.
Once we have a list of candidates that we want to interview, we do one in person interview (mostly standard questions) per person w/ a technical writing exercise. Then we make a hiring decision. None of this Zoom/Teams pre-screen BS and no 2nd and 3rd interviews.

You are hiring for an ‘entry level’ position with entry level pay but trying to hire someone with more than entry level qualifications.

Try posting a job on indeed and see what bottom of the barrel applications you get. All that said, I think people applying probably have similar gripes about trying to land a new job with all the fake postings and terminally open jobs.

When I did hiring I always did in person interviews. And before I would call an application I liked, I would look them up on social media to make sure they seemed semi normal.
