What seemingly simple foods do you notice often get fricked up?

For me it’s potato salad. I like all kinds of potato salad: mustard based, mayo based, German, twice baked, whatever. As long as it’s properly done I’m down. The problem is most restaurants offer at best a forgettable potato salad. And more times than not it’s a complete a turd. I don’t get it

Where you say potato salad is a simple food, I see it as one of the most divisive foods there is. Largely due to the things you mentioned.
Pretty much everyone likes whatever potato salad style they grew up eating and feels like everyone else did it wrong.
ETA: But to answer your question, a burger is pretty simple and when done right it can be downright transcendent. But a lot of places just look it at as simply a burger and don't put a lot of effort into it.

Scrambled eggs here. Most overcook and dry them the hell out.

Grits. For the life of me I can't understand how you can frick them up but it always happens. To thick, to runny, no butter, no seasoning, etc.

for me, its a hamburger.
a good hamburger needs three things...meat/fat ratio correct, salt and high heat. it does not need to be cooked until dry and crumbly, and should be salty/juicy/pink with a good crust
there are so many hamburger places now, charging big dollars for burger. none of them know how to cook one properly (or care to)

For me, it has to be coq au vin. It's chicken and wine, people. Quit screwing it up.
But really, I agree with those who have said eggs, especially scrambled. And I'm guilty of messing them up as well. I'm not patient enough to let them cook low and slow.

French Fries. If you are going to cook them make sure they are crispy. If you cant do homemade fries crispy buy a bag of Ore-Ida.

I agree with those saying burgers. I always laugh at most restaurants that ask you what temperature you would like your burger cooked to, and the thing always comes back well done hockey puck style.

I often think about this and burgers and potato salad are spot on.
Wings is a other example.
Least: Pizza - For the most part even bad pizza is decent food.

People always want to throw it on high heat and make it sizzle. Most of the times it comes out either rock hard or burnt with undercooked sections.
Low and slow to render all the fat out is the appropriate way to do it in my opinion.
