I really go back alot to my John Folse cookbook.
Encyclopedia of Cajun and Creole Cuisine
Even if you don't use the recipes much it's a great read.

I have both the folse books and we never use them because they are so big and heavy. OP i received the following book as a gift and honestly I don’t think I’d ever need another cookbook
LINK
Americas test kitchen collected recipes
and it’s on sale for 20 bucks
once you hone your technique(s) which this book illustrates you rarely will need to look up a recipe again
