I'm thinking the conversation could have gone like this:
Mom: You're married now. You've been married for 6 months. When are you having a kid? I'm not getting any younger.
Daughter: Mom, we're not ready. I have to work. We can't afford the day care.
Mom: You're not getting any younger. Neither am I. I want to enjoy kids while I can move around.
Daughter: Fine. If that's the way you feel you can quit your job to take care of them so that we don't have to pay child care.
Mom: You're married now. You've been married for 6 months. When are you having a kid? I'm not getting any younger.

I get that childcare costs a lot of money, but I just can't see even asking someone to give up their job to convenience my desire to have a kid, much less just assume that they should do it.

Exactly.
My FIL retired very early and they have always loved being able to help out in anyway with our kids. MIL watched my oldest part time for the first two months until we found a good lady to take over.
Every since my kids were old enough to hop on their scooter/bike, they loved nothing more than to ride around the corner to their grandparents to go get snacks and visit.
Inlaws have always been more than happy to help out in anyway. They love it and the kids love it.
Now I would have never expected that from them or worse demanded it in anyway.

Also, many grandparents are only working to have something to do during the day. I wouldn't ask as a end-all solution, but when we had our first, we did ask something like "hey, we are lining up care for the upcoming little shite maker, are you retiring soon and would you like to watch her or do we need to find a facility?"

If said verbatim as the OP quoted, yah...but I'm positive I've made similar comments in a joking manner about my parents or in-laws watching the kids for free. And they don't work at the Dollar General.

When I have a kid(s), I am going to build my mom a separate little cottage on the property. She won't have to work anymore, and she can look after the little ones, garden, and enjoy some goats and dogs. She likes the arrangement.

I'm pretty well versed in sarcasm, but that, unfortunately, was not the vibe I got. She seemed pretty nonchalant about it, not incredulous about the cost of daycare. Maybe she was joking, but it wasn't my impression that she was. who knows.
