i would say a chargrilled oyster for LA. Maybe a bite of blackened redfish/drum with crabmeat topping.

Not saying it's the best bite but a lot of crow is eaten up here in Ark.

No, it's Mizzou BBQ......is all tomato based BBQ Bama BBQ or GA BBQ or LA BBQ? No

Vinegar is Carolina. Lots of different tomato based for different areas. Vinegar style has always been known as a Carolina sauce.

LA isn’t known for a type of BBQ. They borrow other styles, kind of like what you guys are doing. Nothing wrong with that, good to bring BBQ other places.

For Louisiana, I would put a good boiled crawfish up against anything any other states have to offer.

You realize crawfish exist outside of Louisiana right?

For something more Louisiana specific I would suggest Boudin.

Crawfish? I will never understand it. They are decent, but they arent nearly as good as shrimp. They arent as good as crab and they arent even in the same ballpark as lobster. Louisiana has so much to offer when it comes to food. Shrimp etoufee’, gumbo, red beans and rice, boudin, boudin balls, fricasse’, poboys, mufalettas, courtboullion, macque choux, meat pies, blackened redfish, fried specks, fried frog legs, crab cakes. The most Louisiana bite of food I think you can get that I would be proud to serve someone would be a roux base rice and gravy, preferably seafood, with a fried shrimp on top.

Edited to say jambalaya. True jambalaya cooked in a cast iron kettle with pork temple meat and smoked sausage done the right way.

Tennessee would be dry ribs from Rendezvous in Memphis.

Most overrated ribs I’ve ever had. They were actually down right bad the last time I went

My bite from LA, a properly seasoned boiled crab. That lumped crab meat is heaven.

Or a good breakfast taco.

Smoked Brisket Breakfast Taco

Louisiana I'd have to say I've had many one bites of poboys that are better than boiled crawfish.

I don’t think boiled crawfish would be too appealing to outsiders looking for the best food. Some people are just creeped out by eating something staring back at you, and they don’t know how to peel them so they are likely to get frustrated after a pound.
If my friend from Massachusetts was visiting, I would feed them crawfish bisque, gumbo, and a shrimp poboy for starters.
