I've only been to Louisiana a few times for business, and the best thing I had was Andouille. It looks like no one has mentioned it yet. Is that not a legit taste of Louisiana?

A low grade version, maybe. But not the best ones. That's why i said the "perfect" cheescurd, not "a" cheesecurd.

Are those Hatch green chiles?

Those are in the running for GOAT to me. Good heat, great flavor. I had some for my first time in some tacos and was blown away
