If she is working in the business and is getting an interest in the business as she continues to work in the business, her husband can make a claim that the business interest is community property. Why in the f*ck would he be asking him to sign a prenup if it's all her separate property.

He's trying to run you off. The money itself is no big deal. It's whether your future wife will be on your side or her father's side of things. That could become a HUGE problem. You need to have a serious talk with your fiance. The way your future FIL treated you is a symptom you need to understand.
