My guess is the mechanic was troubleshooting a similar vehicle, wanted to see if new injectors (hers were obviously working) would fix the problem, so he grabbed hers and planned on returning them before she came back.

Absolutely. Especially if it's a KIA. There's so many opportunities to crack a piece of plastic or wire harness/hose that has to be tucked in "just right."
The insidious thing is some of the problems won't show up for a year or more. (When the warranty expires.) Then, good luck getting them to admit that the failure was a result of their meddling.
I'd be furious too. There's no way that vehicle can ever be restored to the condition it was in when she drove it in.
They should be on the hook for as long as she owns that car. Free service forever or no deal.

This is precisely why they have that sign on the door that enters the shop that says "no customers beyond this point".

Why would the take parts off? Substitute for cheaper aftermarket parts and sell the originals?

When someone gets caught doing something. It’s the ‘first time’ being caught, not the first time doing it.
They likely pulled this stunt hundreds of times.
If I’ve had a vehicle worked on there recently, I’d be under the hood looking for wrench marks on parts that have never been worked on since I’ve gotten the vehicle.

Service departments at dealerships in general are sketchy and fraudy as hell.
Your best bet is always to find an unaffiliated mechanic that you trust. Our family has one that we've used for 30 years.

I’ve tried telling people my entire life around this country that Lake Charles is like a dark cloud. It is just a nefarious, dark, place filled with a lot of people that think they know everything but have never left Lake Charles.

Not to this extent, but this probably happens more than people realize at repair places with a small parts inventory. She probably should have called the sheriff's dept right after the first or second MF and had that all documented from the start.
