There's a lot of factors. Biggest being type of collapse. If it's a zombie apocalypse, your plan might be a lot different than a nuclear bomb, pandemic, political uprising, etc.
People overestimate how well they'd do in these situations. There's almost always going to be someone more desperate than you to get what you have. Unless you have a small army of trained people and years of ammo, it's not going to work.

I have no idea "how long we will last" type of thing but I can say this. Being 15 miles from the nearest town, and on 100+ acres of family land, we will be able to hunt and fish and survive longer than 50% of people, especially those in urban areas.

Apocalypse fetishizing has been huge for a while.
I always have to ask the people who seem to be wishing this happens if they are prepared to kill innocent children who wander into their territory, because in these scenarios that will need to be SOP.

OP, I’ve know people in the country and would head there. They have stuff and all work as a team. In a his scenario, I’d one wants to survive it, you can’t go at it alone.

People in the city are pretty much screwed as far as leaving via car.
Just look at what a cluster the entirety of BR was immediately after Katrina.
Unless there is enough time to evacuate early, an immediate SHTF scenario means total gridlock.

Preppers, especially the solo Rambo types will be the first against the wall. Read, One Second After. It's about the lights going out and never coming back on. We lose something like 30% of the population in 6 months from heart attacks, diabetes, etc.

So...1 1/2 months tops.
You do realize you need more than just fish and meat right? You need 1 acre per person and unless you are already farming, about 2 years from seeing benefits.

Anything near a water source will have dozens of people if not hundreds or thousands going to it with the same idea within days, if not hours.
But it depends on the parameters of SHTF I guess.
Are all major cities pretty much instantly vaporized in a nuclear conflict? You'll have to deal with fallout but I suppose you have a chance for isolation depending on where you are.

I live on a small island that's probably a better spot than anything I could drive to. Plus, if shite really hits the fan I doubt the ferry keeps running so I'd be stuck anyways.
