Every now and then we'll be on a trip and one of the kids drops a toy or a book or something so my wife unbuckles her seatbelt to reach back and get it or even climb in the back of the vehicle

Every time she says "don't wreck"

As though prior to her saying that I was going to get in a car accident

I say it and when I do I mean to obey traffic laws and drive to not be in a rush. Too many people drive whatever speed they need to make it on time.

Yea I agree.
I thank the person reminding me to drive safely because if they hadn't reminded me I would've forgotten to drive safely and drove like a maniac.
We resolved this in our family by wishing each other Godspeed on their trip.

Keep both hands on the steering wheel, use mirrors, signal before changing lanes/turning, etc

It's called a salutation. We do it many times a day in some form or other. It's a lot nicer than saying "hey a-hole, please never come to see me again" if we're dealing with truth here.
