I go to Chili's, Texas Roadhouse Olive Garden etc... Different people every single visit..

Go to the local mexican restaurant... Same staff that they opened with years ago.

Whats different?

In the end,it all evens out if you're at a place long enough.

Depending on the place, a 10 top might also be broken down into multiple groups with a split check.

I knew a lady about 20 years ago who would routinely work a double shift on a Thursday at a popular neighborhood bar on Metairie Rd. and she told me she would pull in no less than $500 for that shift in tips. Again, 20 years ago which was great money back then and not too shabby now.

It really depends on the server. I've got some that are just ok but make $25/hr. The really good ones are $40/$50 an hour. In this case, it takes from those that hustle and gives to those that do the bare minimum.

On particular shifts/days/time of year, at the expense of others not on those shifts. They were also making less at certain times.
It was to stabilize the pay of all workers, for every day of the week they worked, for every shift they worked, and represented a living wage.
