I hate when "Hollywood" pits a giant Ape vs a giant lizard to fight for world dominance on top of ships in the middle of the ocean.

Exactly. It’s done for entertainment value. You know how boring courtroom dramas would be if they didn’t spice it up a bit?

I have a related pet peeve. Repeated cocking of a pistol in a dialogue scene. This happened in this week’s episode of Falcon and the Winter Soldier. Bucky sneaks up on Zemo and cocks his pistol three times in 30 seconds.
It always goes something like this:
Bad guy: I heard you were looking for me.
(Good guy cocks gun)
Good guy: Yeah. You could say that.
Bad guy: I’m never going to tell you where she is.
Good guy: We’ll see about that (cocks gun).
Bad guy: You don’t have the guts to pull that trigger.
Good guy: (cocks gun) you think I’m playing around?
(Ugh.....)

Mann is a true genius director. The remake of 3:10 to Yuma was pretty damn accurate with it's gunfire sounds, especially the shotguns. Maybe I am misremembering, since it has been quite some time since I have seen it, but I remember thinking how real and natural it sounded.

Hackers had a mix of issues.
Part of it was that the reality of the situation wouldn’t have been good entertainment.
Part of it was that the “experts” hired by the film told them a bunch of stuff that was wrong for shits and giggles.
That being said, they did get some stuff right such as the social engineering to get access to the TV station, using the recorded tones to phreak the pay phone, etc.
I’d say the pranking competition by Miller and Jolie also qualified as they fricked with the agent who popped their friend by canceling his credit cards, hacking his DMV records to add tickets and a DUI, hacking a personal ad to get him harassed by perverts, etc.

This is something I always notice too.
One that sticks out... and I am not criticizing because how could you criticize, is Tombstone. Just an all time great.
But, Doc Holiday must have invented the one and only extended clip revolver immediately before OK Coral. That dude fired no less than 30 rounds per gun.
Still love the scene, just always notice that.

If you know enough about the subject matter that is part of the plot in most any movie you will find issues. The more popcorn flick it is the more laws of physics etc it will likely break. They are entertainment after all.
Just some of the many places where movies diverge from real life:
Courtroom procedure
Surgeries
explosives
almost all military weapons
tons of issues with car chases like pickup trucks staying with sports cars when it can't be the driver
It occurs generally not because no one making the movie doesn't know better it simply isn't what they want to put on screen.
One reason behind the reloading is it would be hell on the editor. Probably every gun "battle" in a movie would have to be reshot at least once to get the reloading sequences correct or they would have to use a bunch of choppy cuts.
I find I enjoy movies more when I just let them take me where they want. Just sort of float on top and absorbs the filmmaker's vision avoiding diving too deep and thinking too much. When the movie is over I allow myself to critique it if I feel like it. My enjoyment of movies has significantly improved when I made that conscious decision years ago.

Give "Open Range" a look and the big near final part of the movie where Costner and Duvall face off with the land baron and his gang gets downright silly.
In one scene I think Costner must have shot 20 plus rounds out of 2 six shooters without reloading.
Another thing that kills me about action movies is the good guys seemingly can't be hit by the bad guys, even if they are shooting at them with multiple assault rifles at the same time.

And a pistol shot makes a human body fly backwards when even a rifle or shotgun blast would not really do that.

Die Hard was maybe the last movie I saw the protagonist actually reloading his magazine.
Hollywood doesn't show it because nobody wants to see it unless there is severe downtime in the action and he's talking to another cop about Twinkies.

There is some really bad pistol scenes in the walking dead. Hanging out a window of a moving car and nailing zombies.
