Night Window scene in 1917. A breathtaking demonstration of cinematography.

The Sicilian scene in True Romance.
Came to post this. I dedicated my research paper on precisely this scene in a film class in college back in the late 90s. I won my professor over with it.

Docking scene in Interstellar - music is incredibly matched
First thing that came to mind. Hans Zimmer turned that film from a good movie into just a mesmerizing experience.
It's my favorite movie of all time so I'm biased but the gas explosion in There Will Be Blood when Daniel is carrying HW away while Johnny Greenwood's odd and eerie piece builds throughout. I thought it was so weirdly mesmerizing the first time I saw it and it's still one of my favorites

Might be unpopular to put Marvel stuff here, but two always stand out to me.
In Iron Man, when Tony first uses the suit to fly back to the area that held him captive and destroy the weapons. After he leaves the cave he gets hit by the Tank round. He gets up and uses the wrist rocket. Iron Man turns around and walks it off while the tank blows up in the background. It’s perfect and everything a comic book move should be.
The next from Endgame, when Thanos is beating Thor’s arse and you see Mjolnir stirring and lifting and then it hits Thanos in the head and flys back to Cap. “I knew it.” We all did, Thor. We all did. There was an audible cheer is the theater when it happened. Still gets me every time.
Now that I think about it, there are scenes in movies that just hit harder when you get to experience them in a theater with a group of people for the first time.

Apocalypse Now - Air Cav attack on Charlie's Point with Ride of The
Valkyries playing.
The Godfather - entire wedding scene.
Unforgiven - final scene when Clint Eastwood leaves Skinny's place
and slowly rides away in the rain. The definition of ominous.
