I believe these concession posts have to be from the competition. Who really cares that much about concession stand food?

This is just the way the world is going. People who have minimum wage esque jobs are usually young and they definitely don't gaf about you or the quality of your food or service. It's like this out in the general public. Aramark is just a representation of the rest of the country. A microcosm if you will. And it ain't getting any better. Wait 'til $15 federal minimum wage goes through... less people who don't gaf doing the same amount of work as before. Recipe for disaster imo.

If you could only get good food in Louisiana.

I agree. It’s a shame in that state they would have concessions that bad.

Although it’s a shite organization, the Marlins showcase some local restaurants by giving them spots to serve at the park. LSU should think about doing that. Take a cut and have good local food options. Win win

I wonder why Centerplate didn't submit a bid. I've worked with them before, locally, and I find them superior to Aramark. However, the game day experience is very dependent on the game-day part time workers... who, as others have said, we don't have a good market of in this area.

Don't they also get a large minimum payment?

The cold cheese and the out of items is 100 percent because of the employees. There is no reason for that. They are just lazy. That's the labor pool.

As far as types of food, I would imagine very few local places would want to work with a large, controlling company like Aramark. If you want more local food vendors involved, LSU would have to bring it in-house. Or, use a vendor like Sodexo, who seems more flexible than Aramark.

Back when the volunteers ran the stands, their groups got paid a percentage of sales, and the percentage increased with volume. They also got docked for too much spoilage. So, they had incentive to get it right.

The paid hourly employees have no such incentive.

Louisiana venues need to have 2 diff level of concessions in my opinion. Something like aramark for hot dogs and nachos, to get the fat contract deal. But they all should have a few emeril Lagasse (for example) stands with some legit items just for reputation purposes if nothing else. For a state that prides itself on food quality, we drop the ball at a lot of the sporting venues.

That popcorn is popped days in advance. I’ve smelled them popping for football games on a Wednesday or Thursday.

I’m also sure they hold it over week to week

I’m kind of with you here. The nachos and coke here taste just like the ones I have at other stadiums.

Stadium food is stadium food IMO

Sure it's free, if you can find a working water fountain. As far as I know, you can't even bring in an empty bottle to fill with water. So every time you need a sip of water, you get to go and find the nearest crusty water fountain.

I'd like to see an expansion of the "craft" food carts and booths. I've always though that a City Pork nacho stand would make a killing at a ball game.

Contracts like that are for complete control. All or nothing.

That is a pork tenderloin sandwich with Amreican cheese, house-made pickles and jalapeno mustard. Other stuff in the pic includes a grilled cheese sandwich, a portobello mushroom salad, bread pudding bites, and three types of specialty hot dogs (clockwise from bottom) -- a domer dog with blue cheese, bacon and caramelized onions; a New Mexico dog with green chiles, chipotle aioli, mozzarella cheese and green onion; and a Navy dog with lump crab sauce, roasted corn, green onion and Old Bay aioli. This is stuff that was available at football, hockey and basketball games.
