Aramark and Levy, the two companies that put in bids for LSU's concessions could. Or are you trying to say they wouldn't be able to follow the recipes for cooking jambalaya and gumbo?

You realize that most of their game day employees are temporary laborers making like $9 an hour right?

They hire them for game day & that’s it. They aren’t making gumbo & jambalaya lol

Not to mention - there are no kitchen facilities in the stadium, nor is there room to build kitchens, even if you wanted to. It has to be prepared offsite and distributed throughout the stadium.

I used to moonlight for a medium-sized arena and convention center. When I first started, I worked for Aramark, then Levy took the contract.

In my experience, Aramark is poorly run from the top. They're not willing to spend money on improvements until they're in jeopardy of losing the contract. Levy is more willing to invest, but both companies are at the mercy of low-paid hourly employees. You're lucky if you get a core group of good bartenders and concessions employees, and maybe a volunteer group, but the bigger the event, the more temps you need.

Somebody mentioned concessions at A&M. Levy has that contract.

Also, as far as jambalaya and the like, that's something that would have to be prepared days in advance, and if the box really doesn't have a centralized kitchen, that means it'll have to be transported over on GameDay or the day before, along with pots etc that will be needed to serve it. It might not be worth the money to them.

Nachos are horrible
Hotdogs are cold and the buns are stale
Popcorn is stale and very salty...taste like it was popped 20 years ago..
Aramark service is extremely slow and overall terrible
Concession stands worked better when the church groups use too run them...wish they would bring this back...ARAMARK is horrible
Other than an occasional drink I always eat before or after the game...food is high priced and HORRIBLE


Just curious, but is normal concessions the only option for you guys in the baseball and football venues?

Baum offers regular concessions, a Dickeys BBQ concession, 1 BBQ/Taco/Nacho on west concourse, and 1 BBQ/Taco/Nacho in north concourse. Snow Cones also available in Hog Pen in May. Both of the Concourse options are excellent. Dickeys BBQ is meh, and hit up regular concessions if you want dogs and popcorn.

That's what I thought. Jambalaya would have to be prepared off site, which would probably be doable for a baseball crowd, which is what OP was referencing. But it also sounds like something LSU would have needed to get in front of when it negotiated the contract.

They're shite and they definitely are WAY overpriced for such a shitty service. They need to be fired and EVERYONE responsible for their hire should also be fired. The whole group needs to be ran out of town.

Tate is already working on a paper with the hypothesis that Gumbo and Jambalaya are Racist and that the Aramark Temporary Laborers are victims of Racial Discrimination by Racist LSU football fans, thus they are nervous and can't effectively perform their Racist Math duties........
