What the hell am I doing wrong w grill???

Bought a Weber spirit 3 a year ago.
Damn flames keep shooting up and burning the food no matter what I do. I keep fire low as possible. I've cleaned it from top to bottom. Doesn't matter. I'm about to shoot the damn thing. I had another Weber before this and never had a problem

When you put the knob on was it turned any? If it was the knob may be at the wrong setting.
In other words the stem for the heat could be turned up too much from a incorrectly installed knob.
The best I could offer without more info or seeing it.

Sounds like your burners are bad or your flavorizer bars are missing.
I would call Weber customer service.
ETA: My usual advice to people with this problem is to tell them to go buy a Weber...

gas grill?

There's your problem. Should have spent the money and purchased the Genesis. I told my mother n law the same thing. She fought w/ the Spirit for a few months and gave it away to one of the college grandkids. After purchasing the Genesis she's never complained again

I’ve found that if I’m cooking something like skin on chicken thighs or quarters that drip a lot of fat that I am better off putting the meat on the outside. I put wood chips in a smoke box over the middle burner which I keep on high. Whenever I open the lid to turn the meat I put the outside burners on full for a minute or two until the temperature reaches 300. At that point I turn the outside burners off again. No problem with flare ups and the meat stays moist if you keep an eye on it.
Also, before I grill the next time I get the grill good and hot to burn off any left on fat.

Everytime I use my smoke box the damned thing turns into a bonfire. I can't keep that thing from just exploding into flames for the life of me.

What kind of meat is doing this? If it's chicken, its fat is bad to flare up under direct flame. You may want to try turning one burner all the way down or off and putting the meat over it for indirect cooking.
I had a 3-burner Spirit for years, and it worked well. The Genesis that replaced it works even better, but the old Spirit is still cooking with the folks I gave it to.
Someone suggested calling Weber. Worth a shot to call or email and describe the issue in detail. I've called a couple of times. Both people I spoke to were American and helpful.

Another option is to invest in GrillGrates
This is a great option. These aluminum grates are marketed to put those attractive stripes on your steaks. But they REALLY tend to spread out and negate the flames that dripping fat will cause. Flip them over, and they act like a griddle. It's one-time xpensive to outfit your whole rig, but they can be used on successive grills for years after your current workhorse dies - just buy a grill with the same size cooking surface. There is a website for them, and Goodwood Hardware in BR stocks them.

How high are the flames when you first ignite the grill? The hole in the orifice may be too big, especially if you have one designed for natural gas and you're running propane on it.

I have a Genesis. My inlaws have a Spirit. I have cooked on their grill dozens of times with no problems. Not sure what she was fighting with the Spirit.
OP-Sounds like you aren't using the flavorizer bars or they are in wrong spot. You shouldn't be able to see the burners or flames (unless you have a flare up).
