Got one for my wife a couple of years ago for Christmas. She uses it maybe once every couple of months. I use it more often. The attachments work well. We have the meat grinder and spiralizer attachments.
I used the meat grinder to grind up extra turkey since our Thanksgiving plans got cancelled.
I make chicken salad with mine every few weeks. It shreds the chicken very easily using the standard arm and helps make everything uniform.

We got one as a wedding gift and it gets used about once a week. She uses it for baking stuff and I'll occasionally use it to shred a smoked pork butt for pulled pork. We have the meat grinder attachment but so far have only used that to grind up a shite ton of strawberries when we made a few batches of strawberry jalapeno jelly.

no, no, no, no, hell no
you never give anything related to cooking or cleaning to a SO because it insults them. you will be, in their eye, immediately be seen as demeaning them expecting them to be your servant
if you know 100% she wants one then get her one, i hear the tilt style is best. but that wont count as her "real" gift so you still need to buy her something else

What if she genuinely loves to cook and everything entertainment wise that she consumes revolves around cooking and baking?
Eta: she gets upset when I won’t let her cook for me

I think I have your model. I had a tilt-head before that just couldn't cut it for heavy loads or dough. This one works great. It's big and barely fits under the cabinets on the counter, which kinda sucks. I also liked being able to tilt the head back on the old model to make adjustments, change attachments, etc. It's a bit more cumbersome with the Pro 5.
Overall, I love having it. I cook a lot and it comes in handy big time for certain types of dishes and baking.

Gets used all the time in my house. Always baking to mixing stuff ( great if you like making your own whipped cream) have had one for about 10 yrs now

Next, start making your mashed potatoes in your mixer.
Between bread and mashed potatoes, you will get plenty of use out of it.
