Cajuns know how to cook, so adding seasoning after its boiled is longer Cajun.

Budget 3lbs of crawfish per person if not cajun. Budget 8lbs for cajuns...but include children and infants in your estimate.

Everyone's grandma can cook the best whatever.......

Always bring water to a boil them simmer. In a heavy bottom pot of course.

Cooking rice in a rice cooker is blasphemy.

If going out to eat anywhere other than fast food, wear your good jeans, but remember to iron them first.

From an LA native who sees too many failed Louisiana food attempts in the DC area:

-Old Bay isn't fit for consumption, and is code for oversalted
-Remoulade > tartar
-Tabasco is the Dixie beer of LA hot sauces
-Cajun and creole aren't interchangeable terms
