Let's Make a List of all the Rules We Can Think of about Louisiana Food

I'll start (not that I agree with all of these):

no tomatoes in jambalaya
no tomatoes in gumbo
no mixing seafood and land animals in gumbo
no sprinkling of spices on crawfish

What else ya got?

New Orleans red beans are sloppy, Alexandria red beans are more soupy.

Yeah, I was aware of that. I've always loved the phrase because, um, they are all dead aren't they?

(That's my own rule, after an out of state friend told me he added that to his gumbo).
