My question is why bay leaves? I've never understood the need for them.

They don't mesh with the flavor I'm going for in my gumbo. They're not necessary and I don't care for the flavor they impart in that dish. I love bay leaves, though. I use them quite often in other things.

I buy Cajun Country Rice (medium grain) that is produced by Falcon Rice Mill, which says it's Louisiana grown rice.
