How screwed am I?

I got distracted and left raw steaks on the counter for 4 hours. I’m screwed right? ??

I always pull mine out and let them get to room temp before cooking. It's fine. Your gut biome needs variety, people are way too worried about germs.

They’re fine. The paranoia on this board about food that’s sat out for a few hours is truly mind boggling. Trust your nose and remember that humans survived for a really long time before the invention of refrigeration.

I remember Outback circa 95 training us in food safety. 4 hours seems to be in line for beef but at the very upper edge.

I’ve let chicken thaw for far longer than that. I’ve actually got some leftover pizza on the counter from last night. I’ll probably eat that for breakfast.

4 hours won't hurt you. This type of thread has come up across so many message boards as long as the internet has been around. It usually ends up with a lot of people saying, "Screw it, I don't want to get interwebz-sued, not my food, throw away your freezer." I can't say I ever read one of these threads with the OP saying at the end that they went ahead and took a chance and got sick. In the one or two times I believe I've been sick from food, it came from a restaurant. Good luck determining what they'll still serve after it's been left out.

I cooked pork steaks for supper last night. I got drunk and didn't eat. Was starving this morning and found one that got left in the microwave. Ate it

I’ll go ahead and say it. It’s right. It’s normal. If you’re afraid to have pizza that sat on the counter in the box overnight then your college experience was very different from mine. I still leave my pizza in the box sitting out overnight. I’ll get a pizza, have some hot, then have some a little later. I’ll have some more at room temperature the next morning, and then that’s when I put it in the fridge. I routinely leave cooked food I had for dinner out overnight so it’s easier to reheat in the microwave the next morning (particularly Chinese food). It’s not something I do with seafood but if it’s beef, chicken, or pork...no problem. Haven’t gotten sick yet.

We are so much overnight pizza. Pretty routine.
My family did what probably many did before current times, Sunday lunch was cooked after church, then sat on the stove or counter all afternoon until dinner. Then hit it again and finish it off. No one ever got so much as a tummy ache.

The same Outback that I ran a service call in 20 years ago that had employees hosing the kitchen down with trays of steaks on the floor
