Food to Smoke for smaller groups

I just Got a Kamado Joe, and it’s been great.
Last weekend I did A couple of chickens for Mother’s Day when I had some family over and we all loved em.
However, I find lot of classic BBQ proteins are sort of a large crowd affair. Pulled pork and Brisket
I’ve done chicken and I am gonna try some ribs this weekend. Heard tri tip is great. Any other good proteins y’all do when it’s just you and 1-2 other people?
The wife is pregnant so she’s a little finicky about left-overs/ anything that’s been sitting in the fridge too long.

You can do brisket flats and find 2-4lb butts.

Pulled pork in that you can find smaller butts to smoke

Pork loin or pork shoulder/blade steaks (sliced butt).
You can do a full brisket or pulled pork and freeze the leftovers in batches. That way you can pull it out and heat up for a small meal.

Butts cut in half are pretty easy to find. Good amount for that many people. I like to do carnitas tacos with them.

Tri-tip reverse sear to 122°-125° then raise the temp on the Joe and sear it off.

Chicken quarters or thighs are my go to, especially if time is a factor.
I love eating pork butts, but it takes considerably longer. With charcoal it requires refueling during the cook (more time cooking + getting up earlier).

Have your butcher cut the brisket or shoulder to the size that you need. Pulled pork and brisket for two.

You can get a pork shoulder and cut it in half and freeze one half for another smoke.
Brisket flats or points from butcher/store or get a full brisket and cut in half, freeze and smoke other half another day.

Poor mans brisket (chuck roast) I’ll put them on for Saturday dinner during football season when it’s just me the wife and kids.
