Lahey’s no knead dough is great if you have a few days before it’s needed. There is a learning curve involved with working/shaping the high hydration doughs but they taste great.
I recently started playing around with slightly lower hydration (68%) and using a combination of levain/small amount of instant yeast.
The lower hydration doughs are much easier to work.

I agree with earlier posts that wireless probes are really only necessary if you are doing rotisserie. They ran an awesome deal on the Signals (4 wired probes/wifi) a couple of weeks ago.
It’s nice to have the ability to check temps/control your fan while away from the house.

They run some deep discounts every couple of months. OP, I would suggest signing up for their text messages. I never had a Meater, but the friends that have one bitch about them a lot. RFX has been rock solid. It’s easy to use, but the TW app kind of sucks.

Years ago I had one blow up on me the second I plugged the charger into the extension cord. The boat was on a trailer in my carport and the battery was sitting on the stern. I got lucky because I had to bend down to plug the charger in. The explosion almost knocked me over and threw battery acid all over my carport. I was young and dumb but learned a serious lesson about batteries that night. I had been smelling the sulphur/rotten egg smell and couldn’t figure out where it was coming from. Pretty sure the trickle charger had malfunctioned and burned all the water off.

My chessie passed at 16yrs old, she was very “dog aggressive” in her later years but was great with our young kids. I have transitioned to more upland hunting so my plan now is to build a string by adding a new pup every 3 years with the goal of always having 3 working dogs (with hopefully 1 retired for a few years). Just added my 2nd dog to the circus a few weeks ago and have been pleasantly surprised on the benefits of a multi-dog household.
The new pup has no concept of personal space…

I use a Mandolin a pretty good bit.
Bought a cheap electric meat slicer to cut bacon. It has been a game changer for my finished product.

This, I used the tracker a few weeks ago to locate one driving through Dallas. It was one of those rare times in life that actually lived up to the memory.

I like these for the vent fans because they are easy to add to any switch (that you don’t need instant on).
I use the Sonof relays behind the switch for lights with motion/contact sensors that I want to turn on instantly.

Same, also use the zigbee temp/humidity sensors to turn on the exhaust fans in the bathrooms. Home Assistant is the tits! When my Protect cam identifies an animal on the patio it turns on a couple of fans.
Just installed a Shelly Uni+ and zigbee vibration sensor on my generator to monitor the battery voltage and get notifications when it starts/stops.
