I was very pleased with a brisket I did 3 weeks ago. Cooked it on 225 until 160 degrees then wrapped in butcher paper til 203. Rested in cooler for almost 3 hours.

I did use a smoke tube for additional smoke. It had a very good color and bark.

The pellets lasted around 8 hours before needing to add more. Definitely need to monitor the levels on long cooks.

Yep, had flight a week ago, Louisville to Dallas. We boarded the plane and waited. An announcement said they can’t fin the pilots.

Apparently the got in late the night before and FAA said they could not fly at scheduled time.

Sat on plane for over 1 hour before leaving.
