AP doesn't, that's a New Orleans thing, and I like mine with tomatoes (I live in AP)

No and those baws in that area make some damn good jambalaya. If you ever get a chance to go to one of the cook offs or festivals, etc with jambalaya out that way, do it.

I guess that's at the tourist trap places.

Honestly, I can't recall that last time I've seen jambalaya on a restaurant menu except for Coops. Out of my five or so friends from the area that cook jambalaya for our parties, etc, none of them put tomatoes in.

I do like a good creole jambalaya from time to time. With shrimp too.

There is a place for tomatoes in jambalaya.

If you don't want it, don't do it.

Pretty simple.

Shrimp and ham jambalaya has tomatoes in it, and it's damn good. I've never made it, myself, though.

If you use tomatoes, I consider it to be closer to a paella than jambalaya.

Jambalaya with tomatoes is no longer jambalaya as far as I’m concerned.

This thread had me craving jambalaya. The cafe in my building has it for today as their lunch special.
No tomatoes and very good. Sausage could be of better quality though.
