I will use a can of Rotel to kick it up a lil bit. That pink/red rice is a NOLA thing......

Yea, if someone cooked and used tomatoes in it, I would still eat it. I just wouldn't call it jambalaya.

Yea, creole "jambalaya" reminds me of Jollof rice from West Africa. Really good but can be very spicy.
