It's an old time thing. Growing up I ate every Sunday at my Italian friends. They each had 9 kids and their moms put hard boiled eggs in the red gravy with the meatballs to stretch the protein. I do it now in their honor and because they are great.

Sounds kind of like Shakshouka... with pasta added.

My grandma put boiled eggs in her spaghetti. Apparently it's a south Italy Naples/Sicily thing.

This is the answer.

Same with gumbo. Eggs (raw) added to the gumbo leftovers to stretch the pot.

A good raw egg in the gumbo gets all the gravy in the yolk and it's incredible. I know some do the boiled egg method, but us Prairie cajuns always just cracked them right into a simmering pot.

My Mom is ninety, still cooks and still puts hard boiled eggs in her red gravy. Evidently, an egg is more cost friendly than a meatball!

I don't but I've heard of it. I have some friends who go ape shite over green peas with eggs and a little roux in it. Serve it over rice.

Had an old Italian housekeeper for years. She made red gravy with meatballs and boiled eggs in it every Sunday. On Mondays, she brought me a big bowl of it. Delicious. I sure do miss her.

My wife's parents decided to help us out when we had our first born son by preparing and freezing meals for us. Great idea and we were very appreciative.....with the exception of the meatloaf that they made that contained a hard boiled egg in the center. What the frick? You slice the meatloaf down the middle to find a damn egg. We threw that shite out.
