I have some fig preserves my grandmother canned 30+ years ago. Once in a while I'm tempted to risk the botulism but so far have resisted pulling the trigger.

I'll go a solid 10+ days on a baked casserole or meatloaf as long there aren't any kill you ingredients

My dad and uncle would eat anything no matter the age. I guess growing up in the middle of nowhere and poor they couldn’t be too choosie. At the hunting cabin it almost seems like a competition of who can eat the oldest most expired food.
Contrast this from my gated community where I heard a girl tell her mother that she couldn’t eat the leftover spaghetti from last night because it probably went bad and they probably shouldn’t give it to the dog.

I cook big meals for myself that generally last me a week (exception of pork and seafood) . I’ve been doing this for a couple years and have never gotten sick.
Last year I ate a jar of skippy peanut butter that expired in 2012, and it tasted like peanut butter should taste. I believe that expiration dates are simply suggestions especially if the color and smell of the canned food passes the common sense test.

Probably something canned.
I regularly smoke bbq, ribs, etc and vac seal and freeze them though. Eaten them up to a year later and they taste like I just made them if reheated right.
About to start two butts in about an hour actually.
If its stored in the fridge about a week though is my cut off. Unless it's something like smoked cheese, beef jerky, salsa, etc.

I eat gochujang and kimchi that is over a year pretty regularly
