re: When do you feel it is worth it to pay for an upgrade on a flight?

I get the "I'd rather use the extra money otherwise.." point of view. Still argue with wife on it sometimes!
I guess it depends on the duration of the flight.
However...
We do nowadays for European Trips. On our trip just done in late November, we did United Premium Plus. I've flown close to 1M miles in my life/career, and let me tell you, at least for that plane it was almost like Business Class. 2/2 configuration. Great meals/wine. All the "high tech" amenities you'd need for devices, audio etc. We were pleasantly surprised.
On our upcoming trip to Norway in August, our legs through Iceland will be on Iceland Air, which has a direct connection now to Nashville. Taking Business Class. Not really that much more than Economy.
Earlier boarding is nice. You'd also get a dedicated overhead bin to place your bags. That means no more jostling with economy passengers for the last bin to place your suitcase in.
The size of seat. Little better food/drinks. 14 hours is a long time. I would, but that's me.

I agree. That BA flight from Heathrow to DFW on an A380 in premium economy is the best non business class travel I’ve experienced.

I'm at a place in my life that I can't and I won't fly coach. I'm a big guy and I need the room. First class domestically and at a minimum premium economy on international flights.

14 hours is a really long time. I’d pay the extra money to be as comfortable as possible. Not having a third person in your row sitting next to you seems like a major plus. Also free booze in comfort +.

US Airlines will probably give you three or so before you get cut off. European and Asian airlines, this actually has value, because as long as you can keep walking to the galley, they'll generally keep serving you.
Pack your toiletry bag with minis, and jam them in your pockets after security when leaving the US. Euro and Asian lounges will let you pour your own, and those mini bottles of water they have are great vehicles for other liquids.

Wish they gave out free sleeping pills instead

If I'm spending 14 hours on a flight, I'm getting the best seat that I can afford.

Pretty certain Delta (and most major carriers) do that in Economy now too for long haul flights like this.

I'm anti upgrade in planes unless it's necessary for me. I can do 3 hours in a cheap Spirit flight and be fine. If I had to go over 5 hours I would consider it. 14 hours I might need to take some sleeping pills or buy an upgrade. Whichever is cheaper.

'Worth' is honestly up to the traveler, but long-haul flights catch my attention, specifically. For OP - to get my own row with my SO + extra legroom on a 14-hour flight, $300/person is an easy 'yes' if it were me traveling.

Every time. It makes traveling with kids so much easier.

On a 14 hour flight I don’t see a world where I’m not scheduling my trip around the most affordable first class seat. No way I’m sitting in even Comfort + for that amount of time.

The general rule of thumb for frequent flying is $50-100 / hour of flying.
So just to be clear -
This is not Delta One (International Business)
This is not Premium Select (Premium Economy)
This is for Comfort Plus (3-4 extra inches of leg room).
Not worth it in this situation.

I'm probably not the right person to respond to this but I won't fly an overnight transatlantic/transpacific flight in Economy. I find it extremely difficult to sleep on planes and a lie-flat seat is the only way I can be semi-functional upon landing.
A $300 upgrade comes out to $21 an hour on a flight that long. I'd absolutely fork that over for some more legroom and no middle seat.

This is honestly why i still have a skymiles card and use for everything. I upgrade almost every business trip over 45min and don’t think twice.

Good rule to follow. I paid $340 for a MCO-DEN upgrade on a United 777 so lie flat, get 2 free bags (had to check at least 1 already), and get a meal/alcohol. I can justify it if I'm getting more value out of the upgrade cost like free bags rather than just the seat. The lie flat will be nice too

I've paid 100 bucks to upgrade on a 3 hour flight, so 300 for a 14hr flight? hell yes.

I'm 6'3" and the extra leg room, which is 4"-5", is well worth the cost on a long flight. Also 2 seats in both side rows instead of 3. Much more room to stretch out and move your legs, to adjust your butt and move into different positions for snoozing/resting, to not get your knees hit when seat in front of you comes back, to get up/down and in/out, etc. Also, closer to front of plane for fast egress when exiting, whether at the destination airport, on fire in a cornfield or in water.
