I would look hard at northern New Mexico. You will probably get more bang for the buck there.
My wife and I were there late fall of last year. The room was very nice and the bed may have been the most comfortable I’ve slept in at any hotel. The bar area is set up really well with different types of seating areas scattered around. The lobby is connected to the bar area and set up the same way. The hotel is in a relatively quiet area which we enjoyed but we easily walked wherever we wanted to go from there. As I said in my previous post we have also stayed at the Roosevelt. It’s a great place to stay as well because of the history of the place and the bars and restaurants in it. Our room was dated though and the location is pretty busy right off of Canal.
I have spent a few nights in the Roosevelt and Eliza Jane. My preference is the Eliza Jane but you can’t go wrong with either.
There’s the old saying that it ain’t over til the fat lady sings. She did.

The bar at the top of the Ponchartrain Hotel is a great place to have a drink.
We try to do our heavy grocery shopping in Taos before we get to Angel Fire for the reason you mentioned. Good store, just very expensive. The El Jefe bar/restaurant is a must for us when we go. I haven't been to any of the new places because we haven't been in a couple of years now. We went a lot when we purchased the house but slowed down our travels there. The biggest drawback to Angel Fire to me is that it isn't easy to get to if you fly. We usually fly to Albuquerque, rent a car and drive in. A friend of mine says Taos is a better place to own especially if you intend to do short term rentals when you aren't there. He says the numbers are much better according to AirDNA. I like Angel Fire though because it offers so much more of what we like....hunting, fishing, mountain biking, hiking, skiing, etc. Sitting on the back porch sipping coffee in mid July when the temp there is 48 if a great change of pace when its 80 here. We do like the golf course there too. It's got kind of a strange layout to me but really pretty views.
We have a place in Angel Fire and really like it at all times of the year. If you are looking there you will find really nice places at good prices compared to other ski areas. Angel Fire is the second type of destination you mentioned, the we are going to go here a few times a year to relax type. I wish we could go more than we do but our house rents well on VRBO and that helps a lot to pay for it.
You can’t go wrong with either of those. If the Trump hotel is cheaper then I wouldn’t hesitate to stay there.
I would ask for hunting club references and former hunting partners.

Bob’s is good. So are many other steakhouses. It isn’t the best for sure but go with the steak.
We took 5 grandkids there a few years ago and the pool pass is worth it.

Someone mentioned Mama’s Fish House in Paia on Maui. The food and setting are incredible.

I would go off strip and eat one night at Herbs and Rye. It has steaks that are really good at about half the price of any other steak I’ve eaten in Las Vegas.
The east side is great except for the sun. There is no shade until the sun dips below the west side of the stadium and that makes it brutally hot in September and early October.
You should definitely try it! It isn’t expensive and really good. Atlantis is a great place for kids. I would go offsite to eat. I would go to a grocery store and buy snacks and drinks before you get to Paradise Island though. Nassau is expensive. Atlantis and Paradise Island take expensive to a higher level.
My wife and I used to walk across the bridge separating Paradise Island from the main island to eat conch salad at the base of the bridge on the mainland side. It’s made as you watch at some of the little shacks there. It’s great for lunch.
Bailey’s poured over vanilla ice cream is great and very easy.
