We aren’t big on the beach but like to go there occasionally for a few days. I like these 3 places for other reasons but there are beaches.
Without the beach criterion I would recommend the national parks and some state parks in the western US.

Try the beaches of the Mediterranean. While I have a strong dislike for beaches, at least you'll get great food in Barcelona, Marseille, Greece, etc. I am *always* disappointed when people don't set their sights high enough on travel destinations. You live at a hub. You can work at least a half day, drive to ATL, and wake up in Barcelona slightly less than 9 hours later.
Case in point, the girl that just cleaned my teeth is getting married again in October, and probably has a $25,000 rock on her finger. Where will they honeymoon? The Caribbean. Not Australia, Chile, Cape Town or anywhere else.
Never go to Johannesburg.

I would suggest Switzerland. One of the most beautiful places I’ve ever seen in my life.

Big Island Hawaii is great. Stay north of Kona Airport along Kohala Coast for many great beaches. Some easily accessible from resorts or public parking (all beaches are public), and some remote that require a hike or rough drive. I like to stay at the Waikoloa Beach area (Hilton, Marriott, condos, and more) as it has good beaches nearby, most amenities, is the sunniest/driest place on Big Island, and is a good central point for Big Island due its proximity with the Saddle Road.
Other than beaches you can visit coffee and chocolate plantations in Kona. Drive up over 13,000 feet to the summit of Mauna Kea. See lush tropical scenery and amazing waterfalls on the west side towards and around Hilo. Plus the volcano is active and lava is visible.
For air travel take a look at Alaska and Southwest for good fares occasionally. Hawaiian is great too, but mostly only accessible via western airports.

Barca, you can walk from the Chocolate Museum (it's more of a chocolate school with cool choco sculptures in it, one on display when I went last was one one of the GoT dragons, which was impressive, hit the beach, eat tapas and have some drinks, catch a cab to Las Ramblas in your flip flops, sample six hours worth of ultra fresh food (for sure get the cones of shaved ham "bits" my entire group devoured them), then go to a bistro near your hotel, or go back to the beach, rinse, repeat.
Hit some Gaudi architecture before or after your beach time each day, and just adapt to going to the "grocery" a block away and cooking up some fantastic stuff in your VRBO, should you choose to. Or don't, and eat Patatas Bravas for every single meal.
The first time you walk buy a store with millions of dollars worth of Jamon Iberico in it, and you notice, you will think, "WTF have I been doing with my life?"
Getting the picture? Eat, drink, relax, eat, eat, relax, eat, relax, eat.
Or, you can go to 30A or Cancun and eat Americanized food. Strive!

We have passports, but haven't been many places outside of the US. We've been to Bahamas multiple times via Cruise. Have done a resort in Dominican. Also been to Jamaica multiple times as my wife's Dad side of the family is Jamaican.

It is absolutely not hard. Learn basic stuff (Hello, thank you, please) you'll be fine. Most of the tourists during the summer (peak season) are weirdly Russian and German. Not sure I understand why the Germans, but, they do German things. You will 100% be OK. Just schedule rides through apps, pay attention to your accommodation bookings. Have cash for stalls. You will not find coffee to go easily in BCN that are super close. There may be four cafes within a block, but there is a clear lack of signals for an Aspy-ish dude like me that they actually serve to-go coffee (to go coffee is not normal in BCN.) If the lady friend likes crunchy bread, learn the word for crunchy, and fake it the best you can. They'll get it. I had to verify that some chicken I was buying in South Korea was not chicken feet, but actual chicken meat, using Microsoft Translate. Just try it out before you leave.
Given your travel experience, you're going to be in multi-lingual places anyway (Eastern Europeans speak more English than much of Europe, but that's a convo for three years from when you hit Barcelona.)
Even people that speak Spanish from central and south America can have issues because in Barcelona, they have signs in Spanish and Catalan (different languages, for sure) and usually English. While you have Microsoft or Google Translate, you're also pointing it at signs that include two or three languages on the same sign.
But it doesn't matter, because there is an app that is the equivalent of Uber to get you where you need to go. Every place I went there were English speakers. A bunch understood French, too, but if you have a bunch of German and Russian tourists, what do you think everyone is speaking?
The desire of everyone is to make money. Like in Jerusalem, where I heard Arab dudes speaking Spanish, French, Italian, Russian, English, and Hebrew, in under 60 seconds, you'll be fine (They are not sure where you're from if you're not clearly wearing an Alabama or Paris St-Germain shirt, etc.) Your alternative is Puerto Rico or Cancun where they speak English but it's not native either?
Go find some Jamon Iberico. And you can be at the beach ten minutes after seeing stuff like this:

Barcelona is amazing, Sagrada Familia is impossible to explain in words or pictures. Park Guell is also pretty amazing. Magic fountain is fun, as well as the beaches and the food. Montserrat is a fun day trip.

Most people speak English in places like Barcelona.
Madrid, the largest city in Spain (and one of the largest in Europe), many think they are "above" that so its actually a bit harder to find English speakers.

The most inexpensive and one of the greatest trips I’ve ever taken was New Mexico. Santa Fe can be a little expensive, but the rest of the state is very cheap. Great things to do there, White Sands, Carlsbad Caverns, Route 66, Tucumcari, The Big Blue Hole, the high desert at sunset, great food, Cloudcroft (non-ski season), plus a bunch of other great small towns full of art and food.
There is Taos, but never went there, it’s a big ski resort.
You can scuba dive the Big Blue Hole.
