I think the issue you are glossing over is assimilation appears to be a one way street. It is local and regional culture having to adapt to outsiders instead of outsiders adapting to the local culture.. it’s no different than hundreds of thousands of people moving into Louisiana and expecting things like traditional gumbo to be modified to their liking. It says a lot about the person to demand locals give up and modify their culture so that you can simultaneously maintain yours.

Really? You would Know if you are using coriander? It's in a lot of BBQ rubs along with the salt, pepper, cumin,brown sugar . You'll find a lot of it in Texas spice rubs.....and in dry rub mixtures like Rendezvous rub for pork......it's in a lot of spice rubs.
