If you put relish in your potato salad I will fight you. It's literally one of the easiest things to NOT frick up.

I only eat potato salad with gumbo so I only ever have it plain...but I see all sorts of varieties offered as side items in restaurants.

Coonasses get so triggered when talking about what to put in gumbo, how to season crawfish, and where the best boudin place is, it's ridiculous

Sweet potato in gumbo is best to me. Also , try peeling a baked sweet potato, cut it in half long ways. Put cracklins(gratons) on one half, put other half on top. Cracklin sandwich, good? Mais yea!

Potato salad with gumbo is common in Evangeline Parish. I put rice and potato salad in mine.

Some people here will only eat potato salad with seafood gumbo, but I will put it in any of mine.

Another thing that people here do with seafood gumbo is to break eggs and throw them in when the gumbo is nearly done. Some good eatin'.

Grandmothers always put eggs in their gumbos. I had gotten away from it, wife dropped a bunch in pot few years ago, and they've been in everyone since. But always had potato salad with gumbo, and I guess I'll need try sweet potatoes now.

First, potato salad goes with gumbo. That is a natural law. The issue is whether the potato salad is served on the side or in the gumbo. This is an ongoing debate at our duck camp each year. I want potato salad on the side, because I don't want it melting and running in the gumbo. I want to taste just gumbo, when I take a bite of gumbo. But one of the other members argues that the taste of potato salad in gumbo is like apple pie and ice cream. Eat them together. One makes the other better.
