If no potato salad, then a sweet potato will do nicely.

if you like potato salad in your gumbo, you need to try a baked (peeled) sweet potato. that's God's gift to mankind. put it in your bowl and take a little piece with each bite. it doesn't "mush" into the gumbo like potato salad does either.

It's either potato salad or a sweet potato for me. Give a slight lean to sweet potato though

I thought it was a yat thing ... I was befriended by some ville plattians and no PS w/ gumbo but then hung out w/ some yats and it was PS in the gumbo

Went to LAGCOE last year with some guys from work. The one guy who went to UL asked if it was cool if we just ate at the places he used to frequent, and we complied. Over the 2 days there we went to about 4 different restaurants (not counting La Fonda's) and he ordered a bowl of gumbo with potato salad AT EVERY RESTAURANT.

It's a plain potato salad, not the kind you eat as a normal side with a relishy taste to it.

My potato salad is only egg, mustard and mayo. I will boil the potatoes with some seasoning though before mashing and mixing. I think it wouldn't work so well with the gumbo if is was full of relish, celery etc.

you will never eat potato salad in gumbo again.

I used to always eat potato salad until my stepmom showed me this years ago. now........my entire family won't eat gumbo without a sweet potato.

Potato Salad means 2 servings for me
1 with rice and gumbo
1 with potato salad and gumbo

For me it goes on the side, but in the same bowl if there's enough space. The potato salad with a little bit of gumbo juice is incredible. I usually eat the gumbo (w/rice of course) and then eat the potato salad.

Duck and fresh sausage gumbo with a big ole scoop of potato salad smack dab in the middle and a little file' - doesn't get much better.

Best of both........I make a sweet potato salad. Use your favorite recipe and substitute.
