My favorites (in no particular order) are

Grouper
Flounder
Specs
Crappie
Flathead
Mahi
Bass
Tuna

Gag or scamp.

I've never had a large grouper knowingly, so I don't know how much they change. But it's my favorite fish to eat.

When in Pensacola, I eat my weight in grouper sandwiches and hit Joe Patti's pretty hard.

Everything else takes a backseat imo.

like i said, depends who's cooking. the only time i had amber was when we stopped by my buddy's dad's restaurant on the way back home and the chef cooked it up for us.

anybody had kingfish? heard they're not terrible, but we always tossed 'em back.

Bass, sunfish (last on the list, but I still very tasty)





Hardheads (yes I tried them against wise advice)
Ladyfish (Ditto, but way worse)


ETA-I gotta get on some Trippletail this year; they aren't that far from my place.

I've had it grilled. It wasn't bad, but it also wasn't something I'd try to catch for anything more than the fun of it. It's also worth noting that it was grilled about 6 hours after getting hooked. I froze a couple of bags of it, and always decided against cooking it when I pulled it from the freezer. Definitely isn't a pretty meat.

I've also heard that fried hardhead is pretty damn good. Hardhead is a deeply ingrained into to me as a trash fish, though, and cleaning up a boatload of their slime isn't worth it. If I ever find myself starving on the coast, though....

I've heard that king fish is good for smoking. Maybe worth a shot next time you catch one?

black tip is great too. but should be bled, cleaned, and gutted right when caught out the meat will smell and taste like piss.
