Best tasting fish you've caught

If you have amberjack at #1, you need to get out more. Might as well put tilapia on the list. This ain't red lobster around here.

amber jack cooked right is amazing.
Id put properly cooked AJ, cobia, triple tail all above snapper.
Snapper just doesnt have any flavor, which is one reason it is so good. But a full cheek is so tender.
flounder is excellent.
Sac au lait, bass, and cat are great for fresh water.
Being that tuna is what it is i dont consider it with the likes of other "fish"
I can not tell you the best.

I know I'm missing some.
Caught a snook which I hear they are some of the best eating you can get but I didn't eat it so I can't speak to that one.
ETA: Flounder. I love flounder
ETA2: Pompano. Haven’t caught many but would never, ever release one unless it was just too small or out of season if there is such a thing.
And I’ll throw whiting out there are well. I think fresh fried whiting is really good.
