Impossible to name just one but a few that have really pushed civilization forward would be:
Isaac Newton - contributions include the laws of motion, calculus as we know it, and to a lesser extent the study of optics
James Maxwell - best known for Maxwell's equations and he paved the way for other greats like Einstein with his study of electromagnetic phenomena
Max Planc - quantum theory - this will become more prevalent in the near future. It is difficult to gauge his impact at this point in time but it has the potential to grow.
Julius Lilienfeld - first patented the concept of a field effect transistor, a severely underrated invention that makes our digital lives possible
Louis Pasteur - someone else already mentioned him but his work has clearly lead to much greater outcomes with public health issues

But don't overlook people like Marie Curie. Her discoveries led to technology that has greatly expanded the human lifespan. I know of nothing more significant to all of us than that.
