I think you're missing the point of Karate, Kung-Fu, Judo, and Taekwondo. They are about self-defense. They were developed by monks in order to protect themselves from attacks and thieves without killing others. A pretty noble endeavor in my opinion.

Boxing
Wrestling
Muay Thai
Lethwei (Google it, this shite is brutal)
Jujitsu
Brazilian Jujitsu
Combat Sambo
Krav Maga- (I'm iffy on this one, because it's nearly impossible to create live sparring).
Judo
Will get your arse kicked-
Kung-fu (it looks cool in the movies, but worthless overall and this includes Jeet Kune Do)
Karate- (is only effective if the opponent is also using Karate)
Ninjitsu- NINJAS AREN'T REAL, Grow Up
Capoeira- Lol, seriously GTFO
Anything Chi- Your grandma doesn't even think this works.
Anything that ends in DO (besides Judo)- Look, this might be hard to accept, but all of these are complete bullshite.

Would recommend a combination of muay thai and BJJ since most street fights allegedly go to the ground from what I've heard and you reduce the risk of criminal charges since you just contain the person with the option of putting to sleep, whereas muay thai is a little "direct". Tried BJJ a few times, but the learning curve was just too much and preferred striking.

In the early days of MMA they allowed all styles of fighting and had no weight classes. After a few years it was clear that wrestling/grappling was king. All the pure boxers got destroyed as did the kickboxers. And kung-fu/karate types fared even worse.
These days every MMA fighter focuses on wrestling and submission holds because it's what actually works. They call it "Brazilian Jiujitsu," but it's basically just wrestling.
By the way, early UFC was much more interesting. No rules (except eye gouging), no weight classes, and no timed rounds.

Grapplers train in escaping bottom positions. If one dude is on top of you while his buddies are kicking you, knowledge of leverage and body position allows you to get that guy off you, so you can get to your feet.

I'd phrase it that grapplers train in being very uncomfortable, and not panicking.

As far as pure striking goes, it's hard to beat Muay Thai. Burmese Muay Thai, or Lethwei, is much more intense. The art of 9 Limbs.
In addition to being allowed to strike with fists, elbows, knees, and feet..headbutting is also allowed.
No pads or gloves, only tape and gauze allowed.
No point system, Can only win by KO.
Wouldn't frick with Myanmar fighters.
