I buy most of mine from Marcels Supermarket. It’s a “ whole muscle “ meat , kind of like eating a rare steak. I don’t eat any of the meat products packed in a sleeve. That’s where you get all kinds of trimmings which is where you run into problems.

Grill or pan with a specific time per side. One flip. Even on number 1 you've got giant bands of medium rare deep into the meat with it being rare in the very center.

If you cook that same steak to rare but flipping every 20-30 seconds, it will look like this:

Filet with a sauce that came out a little too thick, but was delicious.
