It's their event. And if they don't want to run the risk of kids crying during the ceremony, spilling stuff, or anything else that a child would normally do at their formal event, that's their prerogative. And it's the parents' prerogative to hire a sitter and go or stay home.
Additionally, if your wedding is a sit down event, you have to have seating for every single person, including kids. So if John and Jane Parent decide to bring little Paxton and Janice along, that's two more seats you have to fit.
I just don't see what is so rude about having a blanket rule of "no children please." Again, it would be totally different if someone was told not to bring their children and when they get there, kids are running around. THAT would be rude.

most wedding I've attended I wouldn't consider "uber formal" other than the clothes

If a couple doesn't want children at their wedding, then they are well within reason to request such. It certainly isn't "stupid" or unreasonable.
Seems to me the OP wasn't complaining one way or the other. Was just surprised people were actually putting something like that on an invitation, considering how PC everyone is now days.
