Intermittent fasting along with regular exercise, cardio and resistance training brought the best results through the years.
My main issues to get over now are the discipline and will power to be consistent over a long period of time.
I figured Carnivore would be a good place to try based upon how great people look and feel while they are on it. Im probably setting myself up again because this regiment has very little room for error.

I think following a diet in general is a bad idea for you. You should consider getting some help from a psychologist or dietician or whoever about what is causing you to not be able to control yourself with food.
Completely cutting out everything but meat, cold turkey (pun intended), is 100% setting yourself up for failure.
My recommendation always will be (again, not an expert):
1. do not diet. diets are stupid and are not sustainable.
2. track the food you do eat. use MyFitnessPal and understand your caloric intake and the macros you're currently consuming.
3. weight training. sure, cardio will cause you to lose weight faster but building solid muscle will burn fat for you.

Relatable af for me.
But honestly, if you are struggling with food addiction that bad, things like carnivore may make things worse and lead you into binging. Strongly recommend therapy, similar to any other addiction. There's probably something pushing your drive to eat.

This might sound odd but how is your spiritual life? Do you attend church, pray or do any type of morning devotional reading?

Not odd at all. If a man doesn't have a spiritual base its hard to build anything and its the foundation of a complete healthy being.
To answer your question , I don't read any Christian literature daily but I usually at least do some positive affirmations while I'm at work just to keep the soul fed. I probably need to get back into transcendental meditation again to really focus on my intent.

Mine persisted. I felt amazing and the cognitive health was incredible, but the shits...
Ultimately, I added a little fruit and smattering of veggies to carnivore and it became the perfect way of eating for me.

Like a previous poster mentioned, my go to is to get a rotisserie chicken from the grocery store. Walmart was two different sizes. One cost $8 and one cost $5. I get the $5 if available, and eat that, minus the skin, except for the skin on the drum sticks. Its filling, loaded with protein, and next to zero carbs.

I feel like people on the internet over-prescribe therapy for minor bumps in the road of life, but it sounds like you may actually need some help if you honestly think you cannot eat like a normal person.
Nobody here can help you. Go see a professional. You absolutely can have a normal relationship with food. You just don't know how to do it (yet).

I wasn't bragging about my blood work. I was stating that im lucky and im trying to get in front of this again. Hence the fact that im trying to do a lifestyle change. Im not comfortable with where I am. I know I have to change

No. I normally eat exclusively low carb and drink beer. When Covid lockdowns happened and everyone started working out, I did the opposite. Went completely unhealthy. Was hammering the beers and eating garbage. I weighed myself on Christmas and said nope. Stopped drinking and have only had meat, eggs, coffee and water. Pretty much lost a pound a day. Now I’m introducing veggies and fruits slowly.
I also run 10-15 miles a week.

I did the same thing, but on Thanksgiving. I was the heaviest I've ever been. I've since lost 15lbs, and am about 15lbs away from where I should be.
I never stopped working out, but I was slacking on my eating habits since the hurricane, and it was time to get it together. All the extra calories allowed me to gain some mass and strength, but also added some unwanted weight.
