When the Gumbo just Keeps Getting Better in the Fridge

I'm not aware of any other food that does this

Made some short ribs last night. As good as they were yesterday they were even better today.

Similar but slightly different observation about gumbo: is there any food that smells worse when it's cold but amazing when it's heated back up?

That's odd. I've never noticed any gumbo that smelled badly when cold.

It takes more heat to melt gelatin after it sets than it does to make it from the collagen in the meat in the first place. The slow wet heat dissolves the collagen nicely, and the fridge sets it into gelatin. The next day, when you reheat it, the gelatin remains semi set. The gelatin holds the meat together so the texture of the meat is firmer and better than fresh cooked when it's falling apart, but it's still loaded with gelatin and lip smacking good. Alton Brown (and, by extension, Harold McGee) taught me well.

I'll often make a pot roast, spareribs, stew, etc. The night before I want to eat it and reheat it to take advantage of gelatin's tricks.

I think a lot of pastas and pastas sauces get better after a day or two.

Seasoned meats too. Try slowly heating up a left over steak or ribs in the oven set at 225 for about 20 minutes or until your desired temperature. Amazing!

Pot roast and Chili always taste better to me the second day. I read somewhere that things that give off good smells while cooking for a long time will trick our senses, and eating it the next day after just reheating, your nose hasn't been preconditioned to the smell and the tastes come through stronger and better. Maybe a load of BS, but I know when I've had a roast going all day and the house smells like beef and onions, it is good, but lunch the next day always is better.

gumbo, soup, pretty much and gravy based dish gets better the next day because the flavors will blend better over time
