By that I mean types of sandwiches or burritos or tacos.
1. Croissant breakfast sandwich
2. English muffin breakfast sandwich
3. Bagel breakfast sandwich
4. French toast breakfast sandwich
5. Breakfast taco
6. Breakfast burrito
7. Biscuit breakfast sandwich
Or any other methods I’m missing?

My preference is croissants

An omelet with bacon, cheese and sausage with a side of hash browns and a side of grits.

ETA: And throw in a biscuit

ETA2: Pretty sure OP changed the question to "handheld" although I can probably find a way to hold my omelet.

I'm more traditional:

Bacon
Eggs however you want them
Biscuits with real butter and/or jelly
Homemade hash browns or grits

I've been doing biscuits, sausage and white sausage gravy about every 3rd weekend and that is filling on its own.

ETA: As for a breakfast sandwich, it is hard to beat a bacon and egg sandwich on a large seeded hamburger bun, dressed. If I'm eating a breakfast sandwich, that is my go-to.

From this list, I'll go with 3. However, my preferred method is something that's plated - I'm big on garden scrambles with toast and avocado.

I like a hot bowl of grits, with a slab of hog head cheese on top and a couple fried eggs on top of that.

Or eggs and rice

I'm not a croissant fan. Too buttery and greasy in the morning.

Give me a few pieces of crispy bacon, scrambled eggs made by me, grits, and a couple pieces of toast with strawberry jelly.

I can't get past calling it a method.

Yes, I'm old. Get off my lawn!

I do also really enjoy a bagel with onion and chive cream cheese (not in sandwich form).

Lo-carb tortilla, toasted with a little cheddar, egg fried in a non-stick wok, a spoonful of salsa on top.

Simple, quick, doesn't make a mess, cleanup in less than a minute.

I echo all of yours. I’m a traditional all American breakfast type of person.

And the occasional biscuits and sausage gravy.
